The idea of blending salt came as an idea mentioned by Neal Chambers of The Handmade Scotch Egg Company who commented that not all people like “Chilli” !!!

Our choice is a red full bodied Merlot, If salt’s strength is that it plumbs the depth of complex flavors, then there’s perhaps nothing better to pair it with than wine, a beverage so deep and reticent that entire careers have been devoted to unraveling it.

The result braces the salt between layers of sweetness, peppery undertones and red wine acidity. It’s a fantastic complement to dusting a thick hunk of watermelon or a bowl of sliced strawberries.
